Meat specially prepared for Dry Aged Beef is kept for 28 days, so that its surrounding parts become crusty and lose its water. Thus, soft meat which is free of fibers and nerves, and contains nutrients and flavor is obtained. Dry Aged Beef products obtained at the end of this process are stored and presented to the customer.
